
Our history
La Rustichella was born in 1984 thanks to Antonietta De Cristofaro and her passion for artisanal egg pasta.
It is an ancient tradition that is based on the agri-food treasures of which Italy has always been a treasure trove. The members of the Scala family, pasta artisans since 1984, have been able to combine mastery, creativity and attention to product quality with the most modern production techniques. The desire to offer the full and genuine flavors of the past is the indisputable imperative that distinguishes the assortment of La Rustichella. In fact, in each product you can find all the goodness of the homemade traditions, often revealed by just a touch of extra flavour. Sprinkling of nutmeg, gratings of lemon, pinches of black pepper at the right point really know how to make the difference and transform a plate of fresh pasta into a triumph of the senses. Ancient sensations come back to life in La Rustichella fresh pasta: the calibrated roughness of the dough and its subtlety, the balance of the ingredients of the fillings, the harmony of flavours. Taste and pleasure are combined with the search for quality which has led to a rigorous selection of suppliers and raw materials: the result ensures good, tasty products free from additives, colorings and preservatives.
In the early years the production was totally handmade and concentrated exclusively on a few selected products: fusilli, which in respect of the traditions were created by forming a spiral around the iron of the umbrella; the orecchiette shaped simply with the use of the thumbs; the tortellini born from a skilful workmanship through the hands; tagliatelle with their laminated dough (i.e. several overlapping layers of pasta).
Without forgetting our origins in 1988 with the inauguration of new premises, production also undergoes an expansion with the addition of new types of pasta, such as filled pasta.
In 1992, the purchase of new machinery brought the company to the top of technology, raising production to a fully automatic level.
Making pasta is one of the oldest crafts in Italy with which our country has seduced and conquered palates from all over the world.
