Happy customers – Bartolomeo Regine of Il Giardino Mediterraneo talks about La Rustichella pasta

Among our customers operating in the Food sector, the restaurant and farm “Il Giardino Mediterraneo” present in Ischia, in Via Nuova dei Conti, is one of the most loyal. For this reason, with a view to enhancing the food and wine story and the culinary “journeys” of which La La Rustichella pasta is the protagonist, we interviewed chef Bartolomeo Regine for an interesting chat on the quality and goodness of artisan products, on the feedback received from patrons and more.

  • The first time you used La Rustichella products, why did you choose them and why did you continue to choose them?

We started buying La Rustichella products last year, in 2021, and we chose them both for the quality and for the cooking speed of the pasta. In fact, we are a small company and having products that cook in a short time is essential to guarantee excellent service. Among the La Rustichella products, we particularly use fresh pasta.

  • What are the dishes you propose on the menu with La Rustichella pasta? Let’s take some examples.

They are all traditional dishes with a pinch of innovation, so we revisit them in a modern way.

For example, we have the Neapolitan Genoese with fusilli, which takes on a summer vein with the addition of orange and juniper. Or, spaghettone with pacchetelle (that is, fresh cherry tomatoes with a sauce in a pan), a little stracciata di bufala and burnt green pepper pesto (called “friggitelli”).

  • I clienti del locale sono soddisfatti dei primi piatti? Come percepisce il gradimento generale di questi prodotti?

The satisfaction is high, we have noticed that those who taste our first courses realize the goodness of the product, and customers appreciate both the speed of the service and the quality of the dish.

  • Which products and formats do you prefer among the many offered by La Rustichella?

The fusillo al ferretto and the spaghettone are the ones we liked the most right from the start, i.e. a format of pasta with egg and one without egg. We chose them because we liked them a lot on the palate, and we also appreciated how well they kept after cooking.

Furthermore, thanks to these two formats, we can offer spaghettone, which does not contain egg, as an alternative for those with intolerances.

  • Can you recommend a dish to taste, rigorously based on our pasta?

Fusilli with rabbit ragout all’Ischitana. La Rustichella fusillo is perfect for that type of sauce, to be accompanied with Biancolella di Pietratorcia, a wine produced by the winery which also belongs to the owners of the restaurant. This wine enhances rabbit meat, with wild herbs used in cooking, because it does not cover flavors but enhances them.
