Making:
Pour the orecchiette into boiling water and leave cook for 6 minutes. Meanwhile prepare the base for the sauce by pouring oil, poached garlic – which you will brown – and broccoli tops into the pan. Then cover the pan with the lid and leave to simmer for a few minutes with a little boiling water.
Add the sausage to the sauce in the pan and let everything cook, add salt and cover again with the lid.
At the end of cooking pour the pasta directly into the pan and remove the garlic from the sautéed sauce. Leave the pasta to cook for a few more minutes together with the sauce, stirring it in with a little oil and grated pecorino cheese.
Finally, plate the orecchiette decorating with other grated pecorino, nduja and a little pepper.
The dish is ready, all you have to do is bring it to the table!
